Found the butter cookie recipe on food.com, seemed like a pretty standard butter cookie recipe.
I am not going to post a picture by picture blog on this cookie because it is very simple and requires very few steps.
1.Preheat oven to 325
2. Combine sugar, salt, butter, vanilla in a mixing bowl and mix on high until smooth.
3. Puree your coconut.
4. Add yolk, coconut and slowly add flour to your sugar mixture. Combine until fully mixed.
5. Drop 1-1/2 inch balls and make a small print in them with the end of a wooden spoon. To add the jam I used a butter knife and let it fall off the knife into the cookie hole. You can use any method that works.
Bake for approximately 15 minutes until slightly golden.
